View Full Version : Taco Soup--2pts. for 1 cup

I got this from my ww leader so I don't know whose recipe it really is. If anyone knows let me know.

1 lb. ground turkey
1 large chopped onion

Cook the above and drain. Then add the following:

1 pkg. Hidden Valley Ranch Mix
1 pkg. Taco Mix
1 can pinto beans (I bought store brand)
1 can hot chili beans (store brand again, but had a hard time finding them. I kept seeing hot chili with beans and not just chili beans)
1 can whole kernal corn (I left this out since I hate corn in things, I only like it by itself)
1 can stewed tomatoes Mexican style
1 can stewed tomatoes original style

I mashed the tomatoes with my hands. Then you simmer for one hour. 1 cup = 2 points. I added a little water (1/2 cup or less) to mine b/c it was so thick, probably from not adding the corn. Make sure you pour all the contents of the can for everything. I put mine in a crock pot for a few hours. It was really good even my hubby liked it. My batch made 8 servings.

I'm sure there are as many taco soup recipes out there as ... Well, I'm sure there are a lot.

I did the one on dotti's site, sort of. I used that recipes crumbles stuff instead of meat. I also used only one can of pinto beans and a big can of crushed tomatoes (they're cheaper) and a can of dice tomatoes with chile (pretty darn cheap too).

The taco mix and ranch dressing mix were used. Really cheap meal (pointwise and pocketwise). http://www.healthdiscovery.net/ubb/smile.gif

I am guessing a cup for about a smidge less than 1 point.

Mmmm...I made this today! It is SO good! I altered the recipe a bit so I wanted to add my changes in case anybody had the same thoughts that I did.

Instead of using 2 cans of stewed tomatoes (I don't like warm tomatoes much), I only used 1 can of the Mexican flavored tomatoes. Since the soup was rather thick, I added one can of FF chicken broth and one can of beef broth and it made the soup a little thinner. (I only used the beef broth because I ran out of chicken!)

My recipe made 12 cups at 2 points a piece and it is still a very hearty soup. Thanks for the recipe!

I used the basic recipe which turned out mighty spicy with the Jalapeno peppers in the can of tomatoes I used......so I make it very soupy by adding a little water, then added 4 oz. cooked chicken breast and 1/2 c.
uncooked instant rice to 2 cups of the soup.
Brought it to a boil and let it sit for a few moments. Full bodied, not so spicy, very
filling main dish. ;) I think this soup recipe can be the beginning of lot of stew, etc. I intend to add cooked shrimp & rice next.

ooooops....I should have mentioned that the recipe I used for soup didn't have meat in it.
