View Full Version : Dee-Licious Cauliflower Soup

This is great and practically points-free!

2 medium potatoes, chopped
5 cups low-sodium chicken stock
1 medium head cauliflower, chopped
1 tbsp olive oil or butter
1 onion, diced
2-3 cloves garlic, whole (or more to taste)
1 cup frozen/fresh corn (fresh of course is best!)
1 large sweet pepper, diced

in a large pot, bring chicken stock to a boil. add potatoes and cook until almost done. add cauliflower, continue to simmer until very well done.

in the meantime, over medium-low heat, saute onions and garlic cloves in oil/butter, until very well done (then you can mash the garlic with a fork). add onion/garlic mixture to soup pot.

at this point, to get a thick creamy soup, puree the mixture in a food processor (i used my hand blender), or you could leave it as it is for a more "watery" soup. Add corn and sweet pepper. season with salt/pepper to taste; heat through. makes about 10 cups.

Points? well, very negligible!

low-sodium chicken stock is 1 point per can, so that's 2 points for 10 cups of soup.
cauliflower/onion/garlic/red pepper = 0 points
2 potatoes = 6 points
1 1/2 tbsp oil/butter = 3 points
total = 11 points for about 10 cups.

I made this soup tonight to serve tomorrow, and I noticed that the point for the corn wasn't included in the points. Mine also ended up being very thick, so I ended up adding a cup of 2% milk in as well. I also had larger potatoes, and used more than 1.5 tbsp of oil, so I am going to count my whole concoction as 18 points, probably divided 5 ways. We are going to have it with french bread tomorrow for dinner http://www.healthdiscovery.net/ubb/smile.gif We are supposed to have a high of 56'F tomorrow, so the weather is just right for chowder http://www.healthdiscovery.net/ubb/smile.gif

I made this soup too and it is very good. I changed it a bit, added some diced chicken, chopped celery and omitted the corn. Today when I was reheating it for lunch at work I added a slice of Kraft 2% Cheddar cheese for and extra point. Delicious!!

This sounds great! I usually only like to eat cauliflower on my salad with ff dressing but this would be a good way to eat it and have taste, thanks!
