FROM BETTER HOMES AND GARDENS LIGHTSTYE MAGAZINE:

RAINBOW GAZPACHO

1 1/2 cups pineapple juice

2 medium yellow tomatoes, cored and cut up

1 small yellow sweet pepper, stemmed, seeded, and cut up

1 medium orange, peeled, sectioned and seeded

1 medium red or green jalapeno pepper, seeded and cut up

2 large peaches, pitted and chopped

1 1/2 cups peeled, chopped cantaloupe (about 1/2 of a medium)

2 Tablespoons lime juice

2 Tablespoons snipped fresh cilantro

Orange slices, lime slices, cilantro sprigs (optional)

Place pineapple juice, tomatoes, sweet pepper, orange, jalapeno pepper, and half of the melon in a blender container or food processor bowl; cover and blend or process till coarsely chopped. Transfer to a large bowl. Stir in remaining peaches, melon, lime juice, cilantro, and 1 1/4 teaspoon salt. Cover and chill at least 2 hours.

To Serve: spoon into small soup bowls and garnish with orange or lime slices and cilantro, if desired.

Makes six (1 cup) servings
