From Weight Watcher's Cream of the Crop Cookbook.....

Garden Gazpacho 1 Point

2/3 Cup drained bottled roasted red bell peppers
1 teaspoon minced garlic
1 (46 ounce) can vegetable juice, divided
1 cup peeled seeded, finely chopped cucumber
1 cup finely chopped green bell pepper
1 Tablespoon red wine vinegar
1/2 teaspoon pepper
1 (15 ounce) can chickpeas (garbanzo beans), drained
30 thin cucumber slices (optional)
Dill sprigs (optional)

1) Place roasted red bell peppers, garlic, and 1 cup vegetable juice in a blender; process until smooth. Pour mixture into a large serving bowl; stir in remaining vegetable juice, 1 cup cucumber, and next 4 ingredients. Cover and chill at least 1 hour.

2) Spoon soup into bowls; garnish with cucumber slices and dill sprigs, if desired.

Yield: 10 servings
