It just doesn't get any easier than this....

4 each boneless skinless chicken breast, cubed
48 ounces white beans, canned (1 large or 2 reg size cans)
48 ounces salsa, mild or medium (about 2 reg size jars)
22 ounces corn, canned (1 large or 2 reg size cans)
2 teaspoons chili powder, optional
2 teaspoons cumin, optional

Spray large soup pot with nonstick cooking spray and brown chicken. Salt and pepper to taste

Dump in beans, salsa, corn and spices. (I don't drain the beans or corn)

Simmer for 30 to 45 minutes. (Add add a little water if too thick)


Servings: 16
Yield: 16 cups

Notes: Makes about 16 cups.
WW points = 1 point per cup! (without the sour cream or cheese)

You can make half of this recipe with great results. A good way to use up leftover chicken or turkey.
