Crockpot Tortilla Soup
(This is from Southern Living magazine and is so
good, you'll want to double this recipe; leftovers (if there are any, can be frozen)
8 oz. chicken breast cubed, uncooked
2 c. frozen corn
1 large onion, chopped
2 cloves garlic, minced
4 c. chicken broth
10 3/4 oz. tomato puree (you can puree a can of
diced or whole tomatoes in a
blender)
10 oz. Rotel diced tomatoes/green chilies
1 t. salt
2 t. cumin (ground Mexican spice)
1 t. chili powder
1/8 t. Cayenne pepper
1/8 t. black pepper
1 bay leaf
1/2 t. oregano
Toss all in a crockpot on high; cook 6 hours.
Serve with shredded cheese and crushed tortilla
chips.
WW = 1 point per cup (NOT including cheese & chips)

Yea! I was looking all over ofr a Chicken Tortilla Soup. Baked a chicken in the oven, now I am ready to make soup! I am just going to fix it on the stove today. Thanks for the Archive so far back!

Just made this up, and had some to warm me up (it's -35C out there today!). Not bad! I'll have some with my supper later! Might be good to try with leftover turkey!

Just a stupid question. How many cups does this make? I put it thru Master cook and estimated 10 cups. The nutrition came out as 100 cal, 3 fat, 2 fiber, which puts it at 2 points .... But 12 cups comes out as 83 cal, 2 fat and 2 fiber for 1 point.

Gosh, Barb, I posted this 5 years ago!! I don't even remember ever making this, let alone how many servings!!! Wish I could help ya! I just might have to try it, though!:embarrass

Laurie, I honestly didn't even look to see that it was first posted 5 years ago! Grinning. I love soup in the winter time and this looked great! Whoever makes it first can update this with the servings!
Seriously tho, the other thing i did think of ... is that Mastercook gives calories to all the 0 point veggies and things too, and that can alter points, depending on how you calculate recipes points too.

Thanks for bumping-my SIL STOLE my recipe out of my kitchen! She denies it but I gave it to her to copy, no one saw her writing anything down, and it was gone when she was. Also she laughs when she denies it. It IS a lot to write down. Glad to have the print copy again and not go by memory!

Soup was really, really spicy. DH went crazy over it. Next time I'll take some out and then add more spices to it. It was awesome! Thought I'd cut up Velveeta light in it to mask it for another nights supper.

This sounds absolutely delicious, and something that even my boyfriend (who is not on WW and is a terribly picky eater) will enjoy with me!!!

This sounds really good! I'm going to make it tonight, but use a precooked rotisserie chicken from the store (because I'm lazy :p) and just make it on the stovetop. Thanks for this!

Made this last weekend but omitted the cayenne... it had enough spice & flavor w/o it, and I was worried it'd be too spicy w/the pepper.
IT WAS DELICIOUS! I froze several single serving ziplock bags and now I can have it whenever I want!
