These are super fast to make . They can be a main dish or a side, depending on how hungry you are. ;)

Rio Grande Potatoes serves 4

4C. (20ounces) unpeeled baking potatoes, thickly sliced
8 ounces ground 90% lean turkey or beef
1 C. chunky salsa
1/4 C. FF Sour Cream
1/2C. (2 1/4 ounces) RF Cheddar cheese, shredded.

Preheat oven to 350* . Place potatoes in an 8-by-8 inch baking dish. Spray potatoes with butter-flavored cooking spray. Bake until tender. about 30 to 45 mins. In a skillet sprayed with olive-flavored cooking spray, brown meat. Stir in salsa. Lower heat. Simmer until meat and potatoes are cooked through. When serving place 1/4 of potatoes pn each plate , spoon meat mixture evenly over potatoes. Top with 1 TBSP. sour cream and @ 2 TBSP. Cheese.

I've made this in the microwave a few times when I'm in a super hurry. Turns out good. I use the potato button on the microwave and cook the meat on the stove. Cuts the oven time out. :D

Wouldn't that be good as a salad?

It sounds scrumptious! Think I will try it on a bed of wilted spinach. Thanks for the recipe.

Gwen - Holy Cow! The Rio Grande Potatoes
is fabulous. I think everyone should try it right away. I made mine with 12 ozs. of morning star crumbles (no one noticed) so that reduced the points, however, I still ate 5 points worth. My whole family loved it. When I go shopping this Saturday I will get the ingredients to make it again next week. This is a real keeper.

By the way, I served it as a main dish, and it was very filling for everyone. Cybergranny asked if it would be good as a salad, however, I'm not sure about that.
Did you make this up yourself?

Unfortunately , I'm not the mastermind behind this tasty meal. I copied it from a cookbook called Heathly Exchanges (aka HE)
It is one of my favorites. SOOOO EASY to make and VERY good.

BTW, about the salad- I'm not sure . I noticed she (cybergranny) was going to try it with wilted spinach. I wonder how that turned out. I'm not a fan of hot salads. But what ever works! ;)
