Oriental Pepper Steak

Amount Measure Ingredient -- Preparation Method

1 pound beef tip round steak
1 tablespoon cornstarch
1/4 teaspoon ginger
1/4 cup low-sodium soy sauce
1 tablespoon peanut oil
3 medium green peppers -- cut into 1" squares
1 small onion -- chopped
1 clove garlic -- minced
1/2 cup water
2 medium tomatoes -- cut into wedges
4 cups cooked rice
Slice beef diagonally across the grain into very thin slices. (Tip: meat will slice easier if frozen for 1 hour). In a small bowl, combine cornstarch and ginger; add soy sauce and stir. (Personal note: I add garlic salt, to taste.)
Pour soy sauce mixture over beef and stir.
Heat oil in wok over medium-high heat. Add beef to wok and stir-fry until brown; remove from pan. Reduce heat and add peppers, onion, garlic and water to wok; cook 4-5 minutes. Stir in meat and tomatoes; heat through.
Serve with rice.
