If you're also a fan of peppers, I hope you'll enjoy my scaled down version of a dear aunt's stuffed peppers...Let me know!
4 lg. green &/or red sweet peppers
1 lb low-fat (50% reduced) bulk pork sausage
1 1/2 lbs fresh mushrooms, coarsley chopped
1 lg. onion, chopped (I like Vadallias best)
1 sleeve fat-free saltine crackers, crumbled
1 Tbsp. lemon juice
1 lg. egg (to bind) + 1/4 cup water
Cut ea pepper in half & seed.
Break up sausage & brown until 1/2 way done. Drain very well in collander.
In same skillet, spray w/olive oil (Pam) & saute mushrooms & onion. Cover skillet once the veggies "get cookin'" to release juices from mushrooms.
Combine sausage, veggie mixture & Saltines in lg bowl.
Add garlic powder, S & P & lemon juice.
Crack egg, scramble w/1/4 cup water & add to mixture.
Stuff peppers.
Place stuffed peppers in baking pan w/1/3 cup water.
Spray peppers w/olive oil (Pam).
Cover w/foil & bake at 375 for 35 mins.
Uncover & turn heat up to finish at 425 for 15 mins.
