1 angel food cake mix
1 16 oz can pumpkin
1 cup water
1 tsp pumpkin pie spice

Mix together and bake as directions on cake box.

Serves 12 3 pts each

This recipe is one of our favorites. My children voted to have this rather than pumpkin pie last Thanksgiving. We love it.

I take this cake and the version with the pineapple or cherry pie filling to all our potluck lunches at work. It is the first dessert to be eaten. I always take home an empty pan. I have given this recipe to so many people. http://www.healthdiscovery.net/ubb/biggrin.gif

Hi! Just curious what the texture is like? It must be a bit denser than average Angel Food cake? Anyone try this?

The first time I made this I did not include the water and I baked it in an angel food pan. It was heavy and had air holes like a sponge cake. It tasted wonderful. Others have said they baked theirs in a 9 x 13 and used the water and I think that would be best. This has been on other boards with a lot of comments. All good.

The Pineapple Angel Food Cake is just dry cake mix with a large can of crushed pineapple with juice and mix the two together as on the package. I did not add any water.. I made mine in an angel food pan but others make theirs in a 9 x 13 pan. I believe you make the cherry one the same, with out water. My mother use to make a cherry angel cake by putting the pie filling on the bottom of a 9 x 13 pan and mixing the cake as the package directs and putting it on top of the cherries.

My recipe for the angel food cake with cherry pie filling (probably from somewhere on this site) calls for angel food cake mix, l/1 cup cocoa (I use 2 heaping Tbsp more!) and l can Lite Cherry pie filling. The chocolate is fabulous! tongue.gif It's a heavy, dense cake, great with FF Cool Whip. Tastes like Black Forest Cake. YUM!

I haven't seen that variation. Could you clarify again how much cocoa you use?

I have made the one with angel food cake and pumpkin and really enjoyed it. I always measure recipes by how willing I am to serve them to company and I would definitely serve the pumpkin cake.

I've recipes using 1/3 cup to 1/2 cup cocoa for the Black Forest Angel Food Cake variation.

I don't have a boxed angel food cake mix or can of pie filling so I can't help with points on those but for the cocoa powder I use the nutritional info is...

1 Tablespoon =
10 calories
1g fat
1g fiber

I haven't tried the pumpkin version of this recipe yet, but we had the pineapple last night.

It is DELICIOUS!!!! My DH went back for seconds, and then thirds! I'm bringing this to Christmas dinner this year.

I made the pumpkin version of this last night and it was delicious!! I used 2 loaf pans and divided each loaf into 6 servings. I added a tbsp of ff cool whip to mine. Kind of like pumpkin pie cake! I'll have to try the pineapple version as well. Great recipe smile.gif

Make sure your oven is PRE-HEATED and ready-to-go before you mix the batter. It begins to *rise* immediately...and you'll want to get it in the oven while it has it's volume.

(I didn't have my oven totally preheated, and I lost volume before I got it into the oven. It made a denser cake than I had hoped.)

All of these recipes use the "one step" angel food cake mix...

We tried the pumpkin version this week. What a big hit! I, also, serve it with FF Cool Whip. It reminds me of a cross between pumpkin pie and gingerbread cake. Yum yum yum!!!

I made this last night and WOW!! It was fantastic.

Right before I put it in the oven, I sprinkled it with a cinnamon/sugar mix that I have and I'm sure that it didn't get more than 1 tsp.'s worth of sugar but boy was that a nice taste on the tongue.

I took a piece of this to work today for me and two extras for a couple of my weight watching co-workers. They both loved it too and couldn't believe it when I told them the recipe.

Now I'm encouraging everyone to please "eat up" so I can get to the Black Forest version of this cake. Mmmmmmm can't wait.

Not sure if anyone will see this since its kinda an old topic now. You can also use a can of Peaches in the angel food cake mix. Just puree the peaches, use one cup of the puree. You can use the remaining puree to pour over the cake when its served. Delmonte has some flavored peaches too that are good. The points come out the same as the pineapple version.
I have not tried the pumpkin or cherry version and I cant wait to try it! Thanks!!

Hi buddies! Talk about trust.... I read this post last night and printed it out. Tonight I remembered that I need a dessert for our Women's Bible study get together tomorrow. Guess what I made? Yup... Pumpkin Angel Food Cake!! My husband laughed because I trust women I have never met. Well - I DO trust you. So - we'll see how everyone likes it tomorrow. Thank you! :D

I have two words: delightfully delicious! I served this for Thanksgiving dessert with "Pumpkin Mousse" as a topping. It got rave reviews and was just a heavenly (low point) treat :D

Here's the mousse recipe:

PUMPKIN MOUSSE

1 can pumpkin (15 oz)
2 pk F/F-S/F instant vanilla pudding
2 cups of skim milk
1 tub lite cool whip (8 oz)
1/4 tsp pumpkin pie spice


Mix pudding with skim milk; when set add other ingredients
Serves 8
.5 points per serving.

I want to make the pumpkin angel food cake, but stupidly I forget to buy pumpkin pie spice. What do you ladies think of using ginger? Or all spice?

Pumpkin Pie Spice has the following in it:

Nutmeg
Allspice

Well I made this one today. Like a dummy, I didn't print OUT the recipe, so ended up using the pumpkin AND the amount of water called for in the recipe - 1 1/3 cups - so it is VERY moist but VERY VERY tasty! Even DH, who isn't a big pumpkin fan, likes it. He says, "This is like a high speed collision between pumpkin pie and angel food cake!" and that about explains it.

Here is what I did: put 1/4 cup DaVinci sugarfree Gingerbread syrup in the measuring cup and added water to the 1 1/3 cup mark (next time I'll just use a total of 1 cup!); added 1 teaspoon of cinnamon to the pumpkin puree; added the cake mix to the puree and the water mixture on top, then beat it according to the package directions. Divided it between 2 loaf pans, sprinkled the tops with mixture of cinnamon and Splenda, and baked at 325* for 30 minutes (til a cake tester came out clean.) Inverted the loaf pans on 2 cans each, one at each end, and let it cool an hour, then ran a knife around each one and gently coaxed it out of the pan.

I sliced it thinly, I could easily get 15 slices per loaf pan, so I figure it's about 1 point per slice at a total of 30 slices for the 2 pans. We just tested it as-is but I think it would be good with a squirt of Redi-Whip on top; may also try toasting a couple slices and spray on some ICBINB and see how THAT is for breakfast! :D

I'll make this one again with the proper amount of water next time.

Ok, Char, I had to laugh :D - you really do tweak every recipe!!! But, I have to say, it sounds WONDERFUL. I am going to try it for an upcoming potluck.

I have a question for you, though. Why do you invert the pans? I would think the cake would fall out. :confused:

If you read the directions on the back of an angel food cake package they always tell you to invert the cake as soon as it comes out of the oven. In a tube pan you put the neck of a bottle in the hole of the pan to invert. This is so the cake will keep it's nice high volume and not deflate.

If you have added fruit to the cake just make sure the cake is nicely browned on top, with a hard crust. The cake must be thoroughly baked. I have had two cake all over the counter after I inverted them thinking they were done. The center wasn't. If I use heavy fruit like cut up peaches it is best to use a 9 x 13 pan and if you have a high sided lasagne pan all the better. The batter is less dense and bakes better.

Our leader gave us this recipe but she said not to use water. I made it and loved it, but maybe next time I will try to make it with the water.

Oh, I made it as muffins so it is already portioned out to one point muffins.

Thanks so much for pulling this recipe up! I made it this morning... YUMMY!

I used 15 oz of pumpkin, 1 cup water, 1/3 tsp cloves, 1/3 tsp all spice, 1/3 tsp nutmeg, 1/3 tsp cinnamon. I baked it in 2 loaf pans, and cut each loaf into 8 slices.

For the 16 servings I got, I calculated 2 points each! YUMMY and low point! Yippee!

Hi, I wish I could try this, but that angel food cake mix batter, is a real trigger food for me. I had to give up buying it completely. For some reason, I end up eating half of it before it evens gets into the pan. I like it best plain, uncooked, with nothing added to the batter. Go figure...

The pumpkin puree is pretty dense so you need the water to have a light cake batter.

The Pineapple (20 oz can) has all the juice and you DO NOT drain the juice so there is no need for any water.

I made this last night and it is great. I made 2 loaf pans so it is 1.5 points per slice or 2 for 3 points and I put a thin layer of ff coolwhip on it and I loved it.

Sunday, I just made the angel food cake with the 1/2 cup of cocoa and cherry pie filling for my co-workers birthday and everyone raved about it. My WW leader even asked for the recipe!!
Tonight I made a angel food cake with mandarin oranges in it. I can't wait to try it. I'm sharing it at work also. Needless to say I'm the one who bakes. It feels so good to bake again!! :D Thanks for all the great recipes!!!

Thanks for bring these back to the top of the board. I love the Pineapple Angel Food. It is so easy to make and the taste is great.

I made the Pumpkin varation and it is cooling in the kitchen now. I was giving it a try before I make one for a church fellowship meal.

OK--what did I do wrong? It mixed up nicely. I poured into a bundt pan and baked 40 min as directed on the package. I didn't rise much and although it passed the "poke" test, when I cut it, it was heavy and looked like it wasn't done. The flavor was good, but it is REALLY ugly! :D What is the texture supposed to be like?

Ellen, I use a 9"x 13" and baked it for 30 min. It didn't rise like the Pineapple Angel Food Cake did. It was very moist and I guess you could say heavy. I will bake it a little longer next time. I gave some to a friend and she loved it. I also put some in the freezer... I would of ate the whole thing. It would be good with Cool Whip Lite..maybe then it wouldn't look ugly.

What do other BCB have to say?
