does anyone have the WW easy peanut butter cookies recipe? my group leader had it posted @ the meeting last night, but she wrote "T" for many things ... and I couldn't catch her to see if she meant teaspoon or tablespoon ... http://www.healthdiscovery.net/ubb/eek.gif
they're only 1 point each -- i'm dying to make them!

A capital T means Tablespoon and a small t means teaspoon.

here's the recipe!
easy peanut butter cookies
(from WW all things sweet cookbook)
1 2/3 c. flour
1 1/2 t. cornstarch
1 3/4 t. baking powder
1/2 t. baking soda
3/4 c. brown sugar
1/4 c. sugar
1/4 c. vegetable oil
1 1/2 T. light corn syrup
2 1/2 t. vanilla extract
1 large egg
cooking spray
1/4 c. creamy peanut butter
3 T. sugar set aside in a bowl to roll cookies in
preheat over to 375.
combine flour, corn starch, baking powder and baking soda in a bowl, set aside.
combine peanut butter, brown sugar, 1/4 c. sugar and oil with a mixer. add corn syrup, vanilla and egg, beat. add flour mixture to wet mixture and stir.
roll dough into 48 balls. roll balls in sugar, place on cookie sheets coated w/cooking spray. flatten balls with the bottom of a glass.
bake 7 minutes.
makes 48 cookies – 1 point per cookie

uh oh 48 in one batch? will have to divide this one several times otherwise this could be a bit dangerous!

Tried these, YUMMY!! I substituted the 1/4 c. sugar with splenda and also the 3 TBS. I got 42 cookies 1-tsp. each, and then after they baked I put a Hershey Kiss on top. Each one came out to 1.3 points, but I rounded it to 1.5. Great recipe! Thanks http://www.healthdiscovery.net/ubb/biggrin.gif

I've been looking for a Peanut Butter cookie - but I thought I'd try and shave a few points off this one -- I'll let you know if it works!
Sub in applesauce for the 12 points worth of oil
Sub in egg sub for the 2 points worth of whole egg
Sub in 4 pts (2/3 cup) whole grain flour for the 6 points of white
I don't know if I want to take it as far as to sub in fake sugar for the real macoy -- I don't like the chem taste, or the potentials.
But I figure that would shave 15 points off the total of 48, take it down to 33, if I can either make them bigger for the 1 point - or smaller and have them 1/2 point each -- perhaps I have too much time on my hands, eh?

I'm just starting out in the world of baking, and i'm always trying to get as much "bang for my (point)buck". I'm gonna try your changes to the recipe the next time i bake cookies.

Hi Pam...or anyone who has tried this recipe with the substitutions graemlins/wave.gif
How did they come out? I'm desperate for Holiday Cookie recipes & these sounded great. I did not point the original recipe but thought 1 pt sounded low; what with the egg, oil, brown sugar, peanut butter...everything! :confused:
I've had very good luck substituting with Splenda, but what about the brown sugar? Have been unable to find "lite" variety. Also considering going 1/2 & 1/2 on the flour.
Would sure appreciate hints from anyone who has "fiddled" with this recipe! :D
...also feel free to add any other good low point cookie recipes you have up your sleeves, teehee :eek:

Good - morning everyone, Holiday cookies my downfall graemlins/ugh.gif 1 cookie is never enough as fall as homemade holiday cookies go even if they are 1 pt. so like some of you I will try to tweak this recipe a little to maybe cut the pt. down a little bit, maybe use egg whites, applesause or less oil maybe be able to have two of these. tongue.gif

I tried these last night, with egg whites, 1/2 whole wheat pastry flour and applesauce. They took much longer to bake than seven minutes, and the dough consistancy was wetter than normal, but they tasted good (just made it hard to roll). I would add 1/2tsp salt next time.
