Every time that I bake this easy-to-make blueberry cake, my family and company rave about it! One healthy portion (1/8th of the cake) is only 4 points! It is good with light vanilla ice cream.
Also, try substituting the blueberries with sliced fresh peaches ... mm, mm, good!!

Blueberry Cake

1 1/2 cups blueberries
6 tablespoons light margarine
1/2 cup Egg Beaters® 99% egg substitute
1 cup sugar
1 cup flour
1 teaspoon vanilla
trace of cinnamon
Spread blueberries on the bottom of a 9" round pan. Sprinkle with cinnamon and a little sugar. Melt margarine; remove from heat. Beat eggs. Add sugar to melted butter and mix. Add eggs to cooled mixture. Add flour and beat together. Add vanilla. Pour batter over blueberries. Bake in 375 degree oven for 3/4 to 1 hour.
