DanDaMan's KASHI Treats
Makes 12 servings
Ingredients:
6 cups Kashi Good Friends cereal
1 (10-oz) bag marshmallows (38-40 large)
Butter spray (in a CAN not a pump!)
Optional: artificial sweetener
Swiss Miss DIET hot cocoa mix (NOT "fat-free", NOT "sugar-free", it says "Diet" on it, and has 20 cal/packet, 0 gms fat, 1 gm fiber.)
Splitting the Kashi if necessary, put into a ziploc bag and use rolling pin or beat it with something (I used the base of a coffee cup), until it is broken up into about the size of Rice Krispies. Pour into a large bowl... spray with butter spray, toss, spray more, toss, repeat until the cereal is LIGHTLY coated (8-10 seconds TOTAL spraying.). Spray a LARGE
microwavable bowl with butter spray, add marshmallows, heat on HIGH for 3-4 minutes... WATCH CAREFULLY! The marshmallows EXPAND as they heat up!! STIR with a fork sprayed with butter spray about 1/2 way through the cycle. If the marshmallows aren't completely melted after 4 minutes, increase microwave time in 30-sec intervals until they are melted. QUICKLY add the cereal to the melted marshmallows and stir with a fork or spoon sprayed with butter spray. Work fast, because this sets up quickly! Spread the mixture evenly into a sprayed 9 X 13 pan...
refrigerate about 1/2 hour.
Cut into 12 bars. OPTIONAL: If you like sweeter bars, add 2-4 packets of Nutrasweet or Splenda to the sprayed cereal, toss to distribute evenly.
CHOCOLATE KASHI BARS: Add two packets of Swiss Miss DIET hot cocoa mix to the sprayed cereal, cut added artificial sweetener in half or eliminate, toss to mix evenly.
POINTS: This gets complicated because of the Kashi. A 3/4- cup serving of Kashi Good Friends is 90 cal, 1 gm fat, 8 gms fiber. 6 cups (8 servings) would then be 720 cal, 8 gms fat, 64 gms fiber, which works out to 2 points!!! FOR ALL of that cereal! However, most of us probably count Kashi as either 1/2 point or 1 point per cup, because of the fiber. So that's either 3 points or 6 points for the cereal.The marshmallows are definitely 18 points. The butter spray is ordinarily 0, but since you use a lot to coat the cereal,
count it as 1 point (I do this for popcorn all the time.) So TOTAL points are: 22 (if you count Kashi as 1/2 pt/cup) 25 (if you count Kashi as 1 pt/cup).
(BTW, if you combine the nutritional info for the Kashi and marshmallows, excluding the spray, you get: 1620 cal, 8 fat, 64 fiber, which is 20.24 points total. Add in the estimated 1 point for the spray, and you get 21.25 pts total.) My own preference here: count it as 22 points total. If you want to play it safe, count it as 25 points total. For 12 servings, EITHER WAY, it works out, rounded, to TWO points/bar!!!
BTW, if you add the cocoa mix, the point values do not change significantly, as you are adding only 40 cal, 0 fat, 2 fiber, which is less than 1/2 point, to the TOTAL AND THEY ARE SOOOOOOOOOOOO good!! Dan
