Kashi Graham Cracker Bars
Prep time 15 minutes
Source: Adapted from Kraft Food & Family recipes

Ingredients for Bars
7 whole sheets of Reduced Graham crackers
1/4 c reduced margarine (I used ICBNB light)
10 1/2 oz mini marshmallows
6 c Kashi to Good Friends
Ingredients for Topping
2 squares unsweetened baking chocolate
10 packets of equal (or to taste)
1/2 tsp reduced margarine

Line bottom of greased 13x9 inch baking pan line with foil. Spray with Pam. Line with graham cracker sheets, break graham crackers where necessary to fit the sides.
Microwave 1/4 c butter in a large microwavable bowl on high 30 seconds or until butter is melted. Add marshmallows: mix to coat. Microwave for 1 minute; stir; microwave another minute stir and if marshmallows are not melted and smooth yet; microwave 1 more minute and stir.
Stir cereal into marshmallow mixture until cereal is well coated with marshmmallow mix. Let cool slightly. Using light greased hands (I sprayed mine with Pam), press cereal mixture over top of graham crackers in prepared pan, pressing firmly.

Melt chocolate over very low heat or in microwave. Add 1/4 tsp margarine if needed for stirring consistency. Add equal to sweetness desired Drizzle/drop melted chocolate randomly over top of bars. Cool completely. Before cutting into squares, refrigerate about 5 minutes to set chocolate, if necessary. Makes 24 bars at 2 points each.

Calories = 116, Fat = 3, Fiber = 3

note: original recipe called for post oreo o's cereal and used 4 oz of semi-sweet baking chocolate. I changed the cereal to kashi and changed the chocolate to unsweetened baking chocolate with equal and reduced it to 2 oz instead of 4.

Thank you for the recipe, I have everything exept the chocolate, I need to get it, then I will try this, it is good right ? I do like Kashi, so if it is tasty.I'll fix it for the family, Mona

These are really good . . .maybe too good. . .I am going to have use my control to eat only a bar a day . . . (maybe my DH will eat them really fast!!)

If you have semi-sweet chocolate it increases the calories a little, but not enough to increase the points. I was just trying to get the sugar down a little? . . I am thinking at the moment, maybe you could use reduced fat choc chips and mix them into the cereal??? (I don't have the point info on reduced chips, but I will have to figure that out!!!)
