Black Bean Brownies

Please don't let the name of these put you off---they are amazingly good. (They fooled my kids, who can detect a vegetable from 50 paces.) I can't take credit for them---the recipe came from Heather on the AOL Thrive board, who got it from someone, who got it from someone...Its origins are dubious, but the recipe is great!

1 15-ounce can black beans, rinsed and drained
6 egg whites or 1/2 cup fat-free egg substitute
4 ounces unsweetened chocolate
1 tablespoon light butter
2 cups sugar
2 tablespoons instant coffee powder (regular or espresso----I've substituted vanilla with great results when I haven't had coffee)
3 tablespoons all-purpose flour
1/2 cup chopped walnuts, optional

Preheat oven to 350 degrees. Coat a 9" x 13" pan with nonstick spray.

Blend drained beans and 2 egg whites (or 1/3 of 1/2 cup egg substitute) in food processor or blender until smooth. Set aside.

Place chocolate and butter in a microwave-safe bowl. Microwave for 60-90 seconds. Stir every 30 seconds until smooth. Set aside.

Combine bean puree, sugar, flour, coffee powder, and remaining egg whites or substitute in a mixing bowl. Beat until well-combined. Blend in melted chocolate. Pour mix into pan, and sprinkle with walnuts, if desired.

Bake for 30-25 minutes. (They will remain gooey when checked with a knife.)

When completely cool, cut into 30 squares. (Clean blade of knife between cuts to make cutting easier---these are gooey brownies).

Don't let the name fool you these are terrific!! We make these at least once a week now. We made these for our friends at work and we had them try them before we told them what was in them. Well everyone wanted the recipe, including my finicky sister!! Make a batch and enjoy--you'll be pleased!

Are these points calculated with the optional walnuts or without them?
