Cherry Topped Icebox Cake - serves 12
20 graham crackers (2 1/2" x 2 1/2") crushed
1 package (6 oz. serving) sugar-free vanilla instant pudding
2 cups cold milk (1%)
8 oz. carton thawed fat-free Cool Whip topping
2 cans (21 oz. each) light cherry pie filling
Line 13" x 9" pan with one third of the graham crackers.
Prepare pudding mix with cold milk as directed on package. Let
stand five minutes. Gently stir in whipped topping. Spread half the
pudding mixture over crackers. Add second layer of crackers; top
with remaining pudding mixture. Add third layer of crackers. Top
with cherry pie filling. Refrigerate 3 hours.
