One of my favorite recipes passed down through my family has always been Manicotti. So I sat down one day and Weight Watcher-ized it! http://www.healthdiscovery.net/ubb/biggrin.gif It's really good, not very difficult to make, and cuts the points in half from the original recipe without losing any of the flavor:
Ingredients:
For the shells:
1 1/3 C. Flour
1 1/2 C. Water
3 Tbsp. margarine
1 C. Egg Beaters
1/2 tsp. Salt
For the filling:
1 lb. (16 oz.) Fat Free Ricotta cheese
1/2 lb. (8 oz.) Fat Free Shredded Mozzarella cheese
1/2 C. Egg Beaters
Salt, pepper, Low Fat Parmesan cheese, parsley to taste
Directions:
For shells:
Mix all shell ingredients except margarine. Melt margarine in small omelet or crepe pan. Add melted margarine to shell batter and mix in. Pour ladle-fuls of batter into pan, just enough to cover bottom of pan. Cook until very light brown, flip and cook other side (do not brown too much). Continue with remaining shells.
For filling:
Mix all ingredients, adding spices and Parmesan cheese to your tastes. Put spoonfuls of filling in center of shells and roll up. Place filled manicottis in baking dish and cover with tomato sauce. Cover with foil or lid. Bake 350 degrees for about 25-30 minutes.
Makes about 18 manicottis - 2 points each.
