Hi Dina.

Do you have a receipe for a really good low-point marinara sauce?

Thanks,

Heather

Here's a recipe that was shown to me by an Italian friend of mine. Though this recipe was not meant to be a "diet" recipe it is so good that since I've made it I haven't been able to touch jarred spaghetti sauce or even eat spaghetti at a restaurant!

A note about the basil: Do Not substitute dried basil - you will not get the same results. I either grow my own basil in the summer or buy fresh basil in the store. I then store whatever extra I have in the freezer for later use.

Frank's Marinara Sauce

Ingredients:
2 tbsp olive oil
2-3 cloves of garlic (adjust more/less to your taste)
3-4 leaves fresh or frozen basil
2 - 28 oz cans Progresso Tomato Puree

OPTIONAL:
1 - 6 oz can Hunts Tomato Paste
(add the tomato paste if you prefer a sweeter sauce, if you prefer a more acidic sauce then omit the tomato paste)
1 cup water (add this only if you add the tomato paste)

Directions:
Mince the garlic. Add the garlic to the olive oil and sautee on very low heat until the garlic becomes soft. Do not let the garlic brown. If any pieces become brown remove them and turn down the heat so more pieces don't become brown.

Put the tomato puree and optional tomato paste/water into a large pot. Add the garlic/olive oil mixture and the basil leaves and mix well.

Cook on low heat for a minimum of 1 hour stirring occasionally.

This sauce freezes well.

My own calculations (excluding the basil and garlic which I didn't have point values for but I'm assuming they're low in points as they're veggies):

Per Total Recipe:
8.75 cups sauce
35 - 1/4 cup servings
17.5 points
1015 calories
26 g fiber
29 g fat

Per Individual 1/4 cup Serving:
.5 points
29 calories
.74 g fiber
.83 g fat
