Fettucine with Alfredo Sauce

Amount Measure Ingredient -- Preparation Method

2 1/3 tablespoons reduced-calorie margarine
3 tablespoons flour
1 cup evaporated skimmed milk
1 cup skim milk
1/2 teaspoon salt
1/2 teaspoon oregano
1 1/2 ounces grated parmesan cheese
4 tablespoons water
8 ounces fettucine
Melt the margarine in a medium-size pan. Add flour a little at a time (which makes a "roux"). Cook for one minute.
Add both milks a little at a time. Simmer until hot, stirring frequently, for approximately 5 minutes until mixture is thickened. Add the parmesan cheese a little at a time. Add salt and oregano. If needed, add some of the 4 T. water if the sauce is too thick.
Cook fettucine according to package directions. Drain. Serve alfredo sauce over the fettucine.
Sometimes I add cooked chicken, shrimp, or crabmeat to the sauce ... and add points accordingly.
