View Full Version : SPINACH & ROASTED RED PEPPER PIZZA

My daughter pointed this out in the Cream of the Crop cookbook and suggested we have it - it is wonderful!!!

Cooking spray
1 Tbl cornmeal
1 (10-ounce) can refrigerated pizza crust dough
1 cup (4 ounces) shredded Asiago cheese, divided
1/4 teaspoon ground nutmeg
1/8 teaspoon pepper
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 (7-ounce) bottle roasted red bell peppers, drained and cut into 2-inch strips
1/2 teaspoon dried thyme

Preheat oven to 425
Coat a 12-inch round pizza pan with cooking spray, and sprinkle with cornmeal. Pat pizza crust into prepared pan.
Combine 1/2 cup cheese, nutmeg, pepper and spinach in a bowl; toss well. Spread spinach mixture over dough. Top with bell pepper strips; sprinkle with thyme and remaining 1/2 cup cheese. Bake at 425 for 15 minutes or until crust is browned and cheese melts. Makes 6 servings, 5 points each.
