With the pts so low & the serving size so generous, this great stuffing isn't just 4 the holidays.

1cup Celery, chopped
1 cup Onion, chopped
1 cup Mushrooms, chopped
2 tbsp LF Margarine
1 cup Apple Juice, unsweetened
2/3 cup water
1/4 cup Brown Sugar
1 1/2 cup Apples, chopped
1 1/2 tsp Poultry Seasoning
1/2 tsp Black Pepper, course ground
8 cups LF Whole Wheat Bread Cubes, toasted
1/3 cup Egg Substitute
1 1/2 cup Cranberries, chopped
1/2 cup Parsley, chopped
Saute 1st 3 ingredients in margarine until barely tender.
Stir in juice, water, sugar, apple, poultry seasoning & pepper.
Heat to a boil; reduce heat.
Simmer 3 mins & remove from heat.
In lg. bowl, combine bread cubes & apple mixture.
Stir in egg, cranberries & parsely.
Spoon into 2 1/2 qt. oblong baking dish sprayed w/Pam.
Cover & bake 25 mins at 350; uncover & bake additional 10 mins.
Serves 7
