View Full Version : Simmered Cabbage with Potatoes and Bacon

3 slices bacon, chopped
1 medium onion, chopped
2 carrots, peeled and chopped
1 head cabbage (about 2 pounds), cored and roughly cut into 2-3" pieces
2 large potatoes (about 1 pound), scrubbed and cut into 1" cubes
1 tsp fennel seeds (optional)
1/2 cup dark beer (I used regular)
1 cup water
salt and pepper

In a dutch oven or large kettle, cook the bacon over medium heat until lightly browned. Add the onion and cook until transparent, about 5 minutes. Add the carrots, cabbage, potatoes, fennel seeds, beer, water and salt. Bring to a simmer, cover tightly, and cook for 20-25 minutes, or until the vegetables are tender. Stir occasionally for even cooking. Season with pepper.

Makes 4 servings, 3 points per serving.

I made this 2 days in advance and reheated half of it in a large nonstick skillet. I let the liquid cook out to concentrate the flavors more. We had it for dinner with turkey keilbasa and applesauce. It was a hit with my DH. He compared it to a New England boiled dinner.

Jill,

Instead of beer, could I use something else? Possibly broth?
This sounds like a great recipe! I want to try it as soon as possible.

I think chicken broth would work fine. I made it again today and you can't taste the beer, or maybe that was cause I finished off the bottle http://www.healthdiscovery.net/ubb/eek.gif

Someone I work with wants to try it using apple juice.

Brining this to the top for a friend.

I've made this again and omitted the water by accident. It made no difference in the end result.
