Golden Glow Salad

1 pkg sugar free orange jello
1 c water -- boiling
1 can crushed pineapple in juice -- (8oz)
1 tbsp lemon juice
3/4 c shredded carrots
In a bowl, dissolve gelatin in 1 cup boiling water. Drain pineapple, reserving juice. Add lemon juice and enough cold water to reserved pineapple juice to make 1 cup liquid. Stir into gelatin. Chill until
slightly set. Stir in pineapple and carrots. Pour into a 4-cup mold coated with nonstick cooking spray. cover and chill until firm. Unmold.
