Cooking spray
3 c. finely diced zucchini
1/4 c. sliced green onions
3 c. frozen while kernal corn, thawed and well drained on paper towels.
1 c. quartered cherry tomatoes

Coat a non stick skillet with cooking spray. Place on med. high heat until hot. Add zucchni and onions. Saute until tender-crisp.

Combine cooked zucchini, tomato and corn in a bowl.

Dressing:
1 tsp dried thyme, crumbled.
1/4 tsp. salt 1/4 tsp. pepper
1/2 tsp grated lemon peel.
2 tabl. fresh lemon juice
2 tsp. veg. oil
Mix toether and pour over corn mixture and toss

8 Servings = 1 pt. each
6 pts for corn
2 pts for oil
