View Full Version : ZOOCAKES - (great zucchini recipe)

Hi, I found this recipe while looking for a way to use up a bumper crop of zucchini. My kids gave it a thumbs up, so we will have repeat performances of it. I have "slimmed it down" from the original recipe:
1 pound zucchini, grated and sqeezed in paper towels to remove excess moisture
1/3 cup FF grated parmesan cheese
1 container Egg Beaters (equals 2 eggs)
1 small onion, minced, optional
1/2 cup flour
salt and pepper
Pam spray
FF sour cream and applesauce for topping (optional, of course)
Stir together the drained zucchini, parmesan, egg, and onion in a medium bowl. Gently mix in the flour and season to taste.
Heat skillet, spray with Pam. Add spoonfuls of the zucchini batter to skillet, flattening them down with your spoon. Cook until crisply browned on both sides, about 5 minutes per side (I used med-hi heat). You can keep the finished pancakes warm on a cookie sheet in a 200-degree oven until the batter is used up if you want. Makes about 8 good size pancakes.
Points: 1 pt for each pancake ( not including toppings of sour cream and applesauce)

Thanks Sarah - the recipe sounds delicious, I can't wait to try it. Who makes FF parmesean cheese? It sounds too good to be true.

Kraft makes a fat free Parmesan Cheese.

Lisa, Kraft doesn't call it Parmesan, they call it grated topping, and that is how it is listed in the WW Grocery Store Companion as well.

I am not the best cook in the world and it's usually hit or miss when I pull out the frying pan, but this recipe was awesome! (And foolproof apparently.) I loved it. We are going to put that on our regular menu from now on. Thanks for the tip!

Hi Sarah,
Finally tried your Zoo Cake recipe & it's terrific!
I strayed just a bit & because I didn't have flour in the pantry, substituted w/low fat Bisquick & it worked out real well. I also added a dash of nutmeg since I like that spice w/my zucchini & also some lemon-pepper.

Just tried this one and they were great (or grate http://www.healthdiscovery.net/ubb/smile.gif)! I did leave a little zucchini out of the recipe and add some grated carrots in. It made it very colorful and pretty.

I made this Friday night. We had it with TVP Spaghetti. They were soooooooo good. Easy too!!
We didn't have it with sourcream or applesauce. We just put a couple sprays of ICBINB spray and they were yummy.

TVP is "texturized vegetable protein" (http://waltonfeed.com/self/tvp.html) and you can easily use it whenever ground beef is called for in a recipe.

I love zucchini latkes, but I haven't made them in years. I am so happy you posted the recipe with the points. Guess what tomorrow night's side dish is gonna be! You can make a variation using leftover mashed cooked cauliflower, which is also really good. Another good thing is to bake the mixture in a casserole dish to make a zucchini kugel. It'll puff up, a bit like a souffle or a crustless quiche.

I have to laugh, kansaslaura, I too served them with FF smoked sausage tonight. I made mine in the oven though. Sprayed a cookie sheet (with a lip all the way around) with Pam, waited for one side to brown then turned them over. Have to do with a hot oven but you can fit several on a cookie sheet and it's a breeze. Great recipe! Thanks for suggesting it.
