FRESH FRUIT SLAW
16 oz canned Pineapple Chunks packed in juice
4 C Gr Cabbage, shredded
2 C chopped Apple, unpealed
1 C Carrot, shredded
1/2 C chopped Gr Pepper
1/2 C chopped Red Pepper
4 Tbsp Olive Oil
4 Tbsp Honey
3 Tbsp Lemon Juice
1/2 Tsp ground Ginger
1/4 Tsp Salt
1/8 Tsp Lemon-Pepper

Drain Pineapple, reserving 4 Tbsp juice & set aside.
Combine Pineapple, Cabbage, Carrot, Peppers & Apple in lg bowl.
In lg. skillet put 2 Tsp Oil & saute salad ingredients (excluding fruits) for 4-5 mins. Keep veggies crisp -- Don't over cook!
Meanwhile, in a jar, combine reserved Pineapple juice, Oil, Honey, Lemon juice, Ginger, Salt & Lemon-Pepper.
Cover tightly & shake vy well to mix.
Place salad ingredients back in lg bowl & pour dressing over all. Toss lightly to coat.
Chill 5-6 hrs & toss once again prior to serving.

I figure 1 serving = 1 cup @ 3 Pts.
