4 1/2 cups peeled cubed Yukon gold or baking
potato
3/4 cup 2% reduced-fat milk
1 tablespoon butter
3/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
2 garlic cloves, minced
1. Place potato cubes in a medium saucepan, and cover with water; bring to a boil. Reduce heat.Simmer 15 minutes or until potatoes are tender; drain. Mash potato; add milk,butter,salt,pepper,and minced garlic, stirring well.YIELD 4 servings (serving size: 1 cup).
