1 1/4 lb yellow squash sliced
1/2 c sliced onion
1/2 c canned low-sodium chicken broth
1/8 t ground pepper
1/4 t garlic salt
2 T grated fat-free parmesoncheese

1. combine first 5 ingredients in a large saucepan; bring to a boil. reduce heat, and simmer, uncovered 12 minutes or until squash is tender, stirring often.

2. remove squash from pan, using a slotted spoon, and transfer to a serving dish. add cheese and toss gently.

yield: 4 servings
