View Full Version : Pan Roasted Sweet potatoes & Vidalia Onion

1 medium sweet potato per person
1/4 vidalia onion per person

Wash and cut sweet potatoes in half lengthwise, do not peel. Then cut the halves into quarters lengthwise. Cut each quarter into 3 or four pieces widthwise. You will have chunks of potatoe approximately 2"x2"

Cut the quarter of onion into quarters.

Spray a casserole with pam or use an olive oil misto. Place the sweet potatoes in the casserole, so they cover the bottom, sprinkle with salt and pepper and spray again with pam. Toss the onions in on top and toss together.

Bake at 350 for 30 minutes covered and the uncover, check for doneness and bake 10 to 15 minutes more.

The sweet potatoes need nothing else on them and are sweet and flavorful.

3 points, for a 6-8n oz potato, weigh your sweet potato before baking to be sure of points value. Excellent with roasted pork tenderloin, chicken or turkey.
