Pan-fried Coleslaw - 1 point
2 slices sweet hickory smoked bacon
6 cups very thinly sliced cabbage (about 1 pound)
1 tablespoon sugar
3 tablespoons cider vinegar
2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon celery seeds
1. Cook bacon in a large skillet over medium-high heat until crisp;
remove bacon from skillet, reserving drippings in skillet. Set bacon
aside.
2. Cook cabbage in pan drippings over medium-high heat for 6
minutes or until browned, stirring frequently. Add sugar and
remaining ingredients, and cook 1 minutes, stirring constantly.
Remove from heat; crumble bacon, and stir into cabbage mixture.
Serve warm. Makes 6 servings (1/2 cup each)

Note: This is good with pork chops or sausage for a quick dinner.
Also, I always cut the bacon up with my kitchen shears before I
cook it, which (to me at least) is easier than crumbling it after it is
cooked.
