Cheesy Spinach and Mushrooms

Cheesy Spinach and Mushrooms

2 (10-ounce) packages frozen chopped spinach
Cooking Spray
1 Cup chopped onion
1 (8-ounce) package presliced fresh mushrooms
6 tablespoons spreadable cheese with garlic and herbs (such as
Alouette), softened
2 tablespoons grated Parmesan cheese

1. Cook spinach according to microwave directions on package, and
drain (do not squeeze out excess moisture). Set aside.

2. Coat a large nonstick skillet with cooking spray; place over
medium-high heat until hot. Add onion and mushrooms, and saute
5 minutes or until tender.

3. Stir in spinach. Drop spreadable cheese by heaping teaspoonfuls
over hot spinach mixture, stirring gently until cheese melts.
Sprinkle with Parmesan cheese.

Yield: 4 Servings
Serving Size: 3/4 cups
