Cranberry Bread

Amount Measure Ingredient -- Preparation Method

dry ingredients:
2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
wet ingredients:
1 cup cranberries -- whole or chopped
3/4 cup cranberry juice
1/4 cup unsweetened applesauce

1. Perheat oven to 350 degrees.

2. Combine dry ingredients ina bowl. Add wet ingredients and stir just to moisten.

3. Pour into a non stick loaf pan and bake for 45 min. or until done.

Yield:
"1 loaf"

NOTES : 1/12= 2.28 points

The recipe did not say which size loaf pan- I assume a standard size.

This looks good. I love most anything with cranberries, and I am always looking for the ultimate cranberry bread. Why do you think you would not use the light cranberry juice?
Also, I wonder if the cranberries have to be fresh. I can't get those right now. Not for a couple of months. Sometimes you can substitute dried ones, or even whole berry cranberry sauce. What do you think?

I don't think "lite" cranberry juice is the right thing for this recipe because it could be sweetened with something that might not stand up to heat (like aspertame), and based on the amount of sugar listed, the added sugar from cranberry juice may be needed. It's just my theory, but the recipe just said "cranberry juice", so I figured not lite.
As far as the cranberries go, I use forzen Ocean Spray ones in the bag (I usually freeze them when they're cheap). Those are just as good as the "fresh". smile.gif Dried ones will add more sugar to the nutritional info, and probably not as much bulk. But give it a try, it could turn out fantastic!!

I tried this last night with frozen cranberries, which I bought at Safeway. It’s a tasty bread. smile.gif

Just a thought. I read your conversations about the cranberries and use of "lite" juice. I am a Diabetic. Diabetics can use regular sweetned cranberry juice. This is about the only sweetned juice that is recommended because Cranberries are so bitter. The sweetness just rounds it out to make it equal with the other fruits making a calorie count of 60 calories or 15 gms of carbohydrate equallng 1 Carbohydrate. So I personally think that it would be all right to use it for this reason. Just my 2 cents worth added to yours.

I must admit I haven't tried this yet- I just thought it sounded too goo not to share! I'm slowly working my way through all the recipe books at our new local library, and came across this little gem of a book. I'm glad it came out great!

I made this yesterday, and used President's Chioce light cranberry juice made with Splenda (it was all I had in the house). It came out really nice, so I guess that you could use light cranberry juice. I have a bad cold and couldn't taste it too well, but my husband said it was good. smile.gif

I made this a couple evenings ago, and it's pretty tasty. Doubling the recipe gave me 1 loaf and 12 muffins, which I froze for breakfasts when the family is here for Thanksgiving. I used cranberry raspberry juice, natural applesauce, sugar, and 1/2 cup whole wheat flour in place of 1/2 cup white. It's not enough to change the points per serving, but still a good change in my book. My preference would be to eat this bread with a tsp or 2 of whipped butter on it. :)

Made this bread for Thanksgiving. It is very tasty! Next time I make it I will try making muffins out of it. Thanks for the recipe Jeannette! It's a keeper in my book!

I'm glad everyone likes this one! I personally love it, and it's next on my list of breads to make for some friends (I've already made them fat free banana bread and lemon poppy seed bread).

Last time I made this I used orange juice, and the previous time I made it with apple juice- any juice will work without a taste change. Except for maybe prune juice? :D

I got a little daring today and made this recipe substituting drained crushed pineapple (in juice) for the cranberries, and using pineapple juice instead of cranberry juice. The bread came out delicious and moist. My DH:buddysmooloved it too! Thanks again for a wonderful recipe!

I made this and got asked for the recipe! Will definitely be making this again.

Only thing is, if you use whole cranberries, add them after the juice/applesauce
