This falls under the heading of breakfast for dinner. You can have the whole dish for only 6 points!

1 tea margarine
1/2 c FF egg subsitute
2 tablespoons chunky salsa
1 large pita (your choice of flavor) cut in half

Melt the margarine in a nonstick skillet. Whisk the egg subsitute til frothy, then pour it into the skillet. Cook over medium heat, stirring gently, until slightly firm, 1 to 2 minutes. Add the salsa; cook, stirring gently, until the eggs are completely set, about 2 minutes longer. Spoon the egg mixture into the pita halves.

Now, here is what I do. I add 1 sliced scallion and 5 or 6 sliced button mushrooms in with the eggs. Then, I add 1/2 piece diagonally sliced (it makes a triangle) Borden's FF American cheese into each pita half before the eggs go in. I also use onion pitas. It makes the whole dish 7 points. I can only eat half of it which is 3.5 points.
Per serving: 176 calories, 2g fat, 1g fiber.
with the cheese added, add 15 calories per serving
