1 pkg Manischewitz Chicken Couscous
1 can reduced sodium FF chicken broth plus 1 can water
1 large clove garlic, minced
1 large leek, white part only, cleaned and sliced*
8 oz fresh mushroom, sliced**
1/2 tea freshly ground pepper
Pour broth, water, and seasoning mix from couscous in 3 quart saucepan. Bring to a boil. Reduce heat to medium and add leeks, garlic, mushrooms, and pepper. Simmer for ten minutes. Add couscous, cover and remove from heat. Let stand for 10 minutes.
*you can subsitute a medium onion, quartered and sliced for the leeks.
**you can use any variety of fresh mushroom you like from white button to oyster. I use oyser or portabello.
