Here is a favorite bran muffin recipie of mine. I found it on the back of Bob's Red Mill Flax Seed Meal and modified it a little It makes 15 very dense muffins. I think the muffins would rise better with all-purpose flour (orginal recipie) but I use whole wheat. For it to be 2 points, I left in the raisins but left out the nuts. I hope you enjoy!

Bran Flax Muffins.

1 1/2 Cups whole wheat flour - sifted 2 times
3/4 Cup flaxseed meal
3/4 Cup oat bran
1 Cup brown sugar, packed
1/2 Teaspoon salt
2 Teaspoons cinnamon
1 1/2 Cups shredded carrot
2 medium apples, Peeled and Shredded
1/2 Cup raisins, Optional
1 Cup nuts, Optional
3/4 Cup skim milk
1/2 Cup egg substitute
1 teaspoon vanilla

1.Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
2.Stir in carrots, apples, raisins and nuts.
3.Combine milk, egg beaters and vanilla. Pour ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVER MIX.
4.Fill muffin cups 3/4 full. Makes 15 muffins.
5.Bake at 350 for 15-20 minutes.
