Mix 250g plain flour
1tsp baking powder
1tsp bicarb of soda
0.5tsp salt
2tsp cinamon

In another bowl beat together
1 egg
100ml water
1tblsp runny honey
100g soft brown sugar
300g finely grated carrot
1tsp vanilla extract
4 tblsp corn oil

Quickly combine the 2 sets of ingredients to a lumpy consistency.

Spoon into 12 muffin cases and bake for 20-25 mins at 190c or 375f.

Cool completely before icing with
50g light philadelphia cream cheese
100g icing sugar
0.5tsp orange juice.
Combine these and spread on tops of muffins.

3pts(English) with icing, 2.5 without.

My whole family raved about these and wants them made regularly.

Thanks for the recipe, I am looking forward to making them but could you please help me out? What is 250g equivelent to in cups and how about the l00mi of water? Thanks, I will be looking for your posting.

Good morning, I am still looking for the conversion of the metric measurements to the carrot muffing recipe. I a am looking forward to making them. Can anyone help? :confused:
