View Full Version : Lemon Zucchini Poppy Seed Muffins - 1 pt

These muffins are really good, and are only 1 point each. The cereals I used are both favorites of mine, and I get them in the health food section of my grocery store (Wegman's). If you can't find that brand, I'd think you could substitute something similar. The oat bran one is the texture of Cream of Wheat, and the Multigrain is like oatmeal. For the yogurt, I used Dannon Light N Fit, but Breyer's makes one with the same calories, and our store brand is even less.

Lemon Zucchini Poppy Seed Muffins
Makes 12 muffins, 1 Point each


1 cup Mother’s MultiGrain Hot Cereal (rye, barley, oats, wheat): 260 cal, 10 gr fiber, 2 gr fat
1 1/2 cups Mother’s Oat Bran Hot Cereal: 450 cal, 18 gr fiber, 9 gr fat
1 TBSP baking powder
1/2 tsp salt
1 tsp Sweet N Low sugar substitute (or Splenda, just not Equal 'cause it doesn't bake well)
1 (8 oz) container fat free low calorie vanilla or lemon flavored yogurt: 120 cal, 0 gr fiber, 0 gr fat
6 TBSP All Whites (egg whites in carton, next to egg substitutes): 50 cal, 0 gr fiber, 0 gr fat
1 TBSP lemon juice
1 tsp lemon extract
1 cup shredded zucchini with skin: 22 cal, 1 gr fiber, 0 gr fat
2 TBSP poppy seeds: 90 cal, 1 gr fiber, 7 gr fat


Preheat oven to 450 degrees. Mix dry ingredients together in bowl. In separate bowl, mix together: yogurt, egg whites, lemon juice, extract. Add zucchini and poppy seeds. Gradually add dry ingredients to liquid mixture, gently folding together (don’t actually stir), just enough to blend - don’t overmix or muffins might be rubbery. Batter will be thick. Spray 12 count muffin tin and divide batter equally. Bake for approximately 15 minutes, test with toothpick inserted in middle or when muffins spring back when lightly touched. Remove & let cool for few minutes - lift out and place on rack. Frost with glaze below.

Total: 992 calories, 30 gr fiber, 18 gr fat
12 muffins, each = 83 calories, 2.5 gr fiber, 1.5 gr fat, 1 point

Lemon Glaze (adds 10 calories per muffin, stays just barely within the 1 pt area on slider - count as you think appropriate)
1/4 cup powdered sugar: 120 calories, 0 gr fiber, 0 fat
1 1/2 tsp lemon juice

Mix together to form frosting; spread small amount on each muffin (doesn’t make a lot - just enough to glaze).

Without poppy seeds:
Total = 902 calories, 29 gr fiber, 12 gr fat
12 muffins, each = 75 calories, 2.4 gr fiber, 1 gr fat, 1 point
with lemon glaze = 85 calories, 2.4 gr fiber, 1 gr fat, 1 point
