From the ADA site:

3/4 cup low sugar bran cereal (flakes or nuggets)
3/4 cup skim milk
1 egg
1 egg white
1 tbsp canola oil
1/4 cup unsweetened applesauce
1 tbsp honey
1 tbsp brown sugar
1 cup quick cooking oats
1/3 cup whole wheat flour
1/3 cup white flour
1/2 cup currants or raisins
1 tsp vanilla
1 tsp cinnamon
2 tsp baking powder

Preheat oven to 375 degrees. Combine all ingredients and mix until blended. Do not overbeat. Pour batter into 12 nonstick muffin cups and bake for 20-25 mins. Remove muffins from oven and cool slightly. Remove muffins from pan and cool completely.

12 servings:
117 cal, 2gm fat, 2 gm fiber
