These grains are rice substitutes w/more fiber and great flavor...try these: saute in olive oil spray, chopped onion and either canned or fresh chopped mushrooms. When soft..add 1 can of beef or chicken broth and add 1 c. barley...simmer covered till done about 40 min. With couscous, after broth comes to boil, remove from heat, add 1 c. couscous and just let sit till liquid absorbed. Fluff w/fork and serve.... this works best in flat, not deep pan. Both grains, especially couscous makes a nice salad served cold with peppers and some lemon juice & 1 tbl. olive oil. Enjoy.

Boy am I glad I read this http://www.healthdiscovery.net/ubb/biggrin.gif , I bought a package of Pearl Barley a few weeks ago and it is just sitting in the pantry, now I have a recipe I can try out http://www.healthdiscovery.net/ubb/biggrin.gif Thanks alot.
