From Eat for a Healthy Lifestyle Class serves 8 2 pts each
2 tabl. fat free or reduced fat cholesterol free mayonnaise
2 tabl. minced fresh parsley
4 tsp. Dijon mustard
8 slices French bread, approx 1 oz each slice
3 tabl. grated Parmesan cheese
In a small bowl, combine first 3 ingredients. Spread mixture onto one side of each bread slice. Sprinkle each with 1 tsp. Parmesa cheese.
Place the bread slices, coated side up, on a baking sheet. Broil about 5" from the heat for 3 - 4 minutes or until golden. Serve warm
