From Weight Watchers Complete Cookbook and Program Basics copyright 1994

Makes 12 Servings

CORN BREAD

1 1/4 cups yellow cornmeal
3/4 cup all-purpose flour
1 Tablespoon + 1 teaspoon granulated sugar
21/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup+2 Tablespoons low-fat (1.5%) buttermilk

1) Preheat oven to 400 degrees F. Spray a 9" square pan or a 12 muffin tin with nonstick cooking spray.

2) In large bowl, combine cornmeal, flour, sugar, baking powder and salt. In small bowl, beat egg with buttermilk.

3) Add buttermilk mixture to flour mixture and mix just until blended. Do not overblend.

4) Spoon into prepared pan and bake 20-25 minutes or until golden brown and toothpick comes out clean. Cool 10 minutes on a rack; turn out and serve warm.

Each serving provides:
1 bread, 35 optional calories

Per Serving: 2 points
105 calories, 3 g protein, 1 g fat, 20 g carbohydrate, 223 mg sodium, 19 mg Cholesterol, 1 g fiber

CHEESE CORN BREAD
Omit sugar, and add 1 1/2 ounces grated extra sharp cheddar cheese, 1 1/2 ounces grated Parmesan cheese, 1 cup cooked or frozen corn kernels and 1 - 2 teaspoons minced jalapeno chilies.

Each Serving Provides: 1/4 protein, 1 1/4 breads, 25 optional

Per Serving: 3 points
145 Calories, 6 g protein, 4 g fat, 22 g carbohydrates, 313 mg. sodium, 26 mg cholesterol, 1 g fiber
