Friendly Fiber Muffins
makes 12 ~ preheat oven to 400 F

1 cup whole wheat flour
2 t baking powder
1/2 t salt
1 + 3/4 cups Kashi Good Friends or Go Lean Cereal
3/4 cup skim milk
1/4 cup honey
2 egg whites
1/4 cup unsweetened apple sauce
1 medium banana, mashed
cooking spray
In small bowl combine flour, baking powder and salt. Set aside. In a large mixing bowl, combine cereal and milk and let stand 2-3 minutes. Add the honey and egg whites and beat well. Stir in applesauce and banana. Add dry ingredients and mix only until moistened. Don't overmix.
Fill sprayed muffin tins. Bake 20 - 25 minutes or until lightly browned.

12 servings ~ 1 point each ~ 100 calories, 3 g fiber ~ 0.2 g fat (0)

Just bought my first box of Kashi Good Friends and tried it this morning. I was thinking it would make up a great batch of muffins. Voila! I found this recipe http://www.healthdiscovery.net/ubb/biggrin.gif !

Do the muffins freeze well? If I don't freeze them I'm not sure they will last long.

Muffins do freeze well. If you will eat them in 5 or 6 days, wrap them individually in plastic wrap and put in a zip lock bag and store in the refrigerator. I do this with the Cinnmon Bran Muffins I make from dottisweighlosszone.com. I warm them in the microwave on 50% power about 1 minute for 2. 30 seconds for 1. This way, to me they even taste better than when they come fresh from the over. I have eaten two of these muffins for breakfast for 20 months. You can tell I like them. 2 = 3 pts with out nuts

These muffins sound REALLY good, but for those of us w/o access to these specific cereals, what might be a common substitute?
