2 cups 100% Bran or All Bran
1/2 cuo oatbran
1/2 cup whole wheat flour
1/4 cup sugar
1 cup fat free buttermilk OR 1 cup fat free plain yogurt
2 egg whites
1/2 cup apple sauce
3/4 cup blueberries
2/3 cup peach (diced really small)
(can be canned in own syrup, drained well)
2 tsp. baking powder
1/2 tsp. baking soda
pinch salt
1 tsp. vanilla
Makes 12 muffins - 1 point each
Mix bran, oatbran, buttermilk, applesauce, egg whites, vanilla and sugar. Let stand for 2 to 3 minutes. Mix flour, salt, powder, and soda. Stir into wet mixture. Add fruit, mix in. Spray tins with non-fat spray. Bake 15 to 20 minutes at 400. Muffins are done when they spring back when touched. DO NOT OVERBAKE.
Since I personally do not like blueberries, I make these using a mashed banana instead.
This recipe was created by my friend Dawn. She was trying to duplicate the Our Daily Muffins. These are better. Hope you enjoy them.
