English Muffin Loaves
This is a good no fat ENGLISH MUFFIN RECIPE
5 1/2 to 6 Cups flour*
2 pkgs. dry yeast
1 T. sugar
2 t. salt
1/4 t. baking soda
2 cups skim milk
1/2 cup water
Cornmeal
*Measure by spooning flour lightly into cup.
Combine 3 cups flour, yeast, sugar, salt and soda. Heat liquids until very warm (120 to 130 degrees F) Add to dry mixture; beat well. Stir in enough more flour to make a stiff batter. Spoon into Two 8 1/2x41/2 inch pans that have been sprayed with something like PAM and sprinkled with cornmeal. Sprinkle tops with cornmeal. Cover and let rise in warm place for 45 minutes. Bake at 400 for 25 minutes. Remove from pans immediately and cool.
2 points for 1 one ounze slice. This point vallue may be on the high side.
