Chicken Parmesan

4 boned and skinned chicken breast halves
1/2 cup Italian bread crumbs
2 tablespoons grated parmesan cheese
1/2 teaspoon garlic salt
olive oil-flavored nonstick spray
4 teaspoons olive oil
1 large can crushed tomatoes
1/4 cup white or Marsala wine
2 teaspoons Italian seasoning
1/4 teaspoon pepper
4 ounces shredded lowfat mozzarella cheese

Place Italian bread crumbs, grated parmesan cheese, and garlic salt in a gallon-size zip-top bag. Shake bag to combine ingredients.
Place boneless chicken breasts between 2 sheets of wax paper. Pound chicken with a mallet until thin. Rinse chicken with water, and place two breasts in the zip-top bag. Shake to coat the chicken breasts with the bread crumb mixture. Take the chicken out. Then repeat with the remaining two chicken breasts.

Spray a medium-large frying pan with cooking spray; add olive oil and heat. When the oil is hot, add the 4 coated chicken breasts. Sauté on each side until golden brown. Add crushed tomatoes, wine, Italian seasoning, and pepper. After this mixture has heated up, reduce to a low heat and allow the chicken to simmer in the sauce for 30-40 minutes. Sprinkle 1 ounce of shredded mozzarella cheese over each chicken breast and turn off the heat. Allow a few minutes for the cheese to melt.

Serve over pasta (and add points accordingly).
