Chicken Sauté with White Beans

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil
1 large onion -- chopped
3 garlic cloves -- minced
4 cloves boned and skinned chicken breast halves
1 14.5 oz. can diced tomatoes with Italian herbs
1 15-oz. can cannellini beans
1/3 cup white or sherry wine
1/2 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1 shake pepper
Heat olive oil in 10-11" sauté pan. Add chopped onions and minced garlic, and sauté until onion is translucent. Add chicken breast halves and brown a couple minutes on each side. Add remaining ingredients, stirring to combine. Cover and simmer for one hour.
(This recipe makes a delicious gravy which can be eaten like a soup along with the chicken.)
