Thai Chicken with Basil

1 1/2 pounds boned and skinned chicken breasts -- cut into 1x2" pieces
2 tablespoons fish sauce
1 1/2 tablespoons soy sauce
1 tablespoon water
1 1/2 teaspoons sugar
1 large onion -- cut in thin slices
3 chili peppers -- seeded and sliced
3 cloves garlic -- minced
1 1/2 cups (fresh) basil leaves * -- lightly packed
1 1/3 cups lite coconut milk
In medium bowl, combine the chicken with fish sauce, soy sauce, water, and sugar. Spray a large nonstick frying pan or wok with cooking spray and heat pan over moderately high heat. Add the onion and cook, stirring, for 2 minutes. Stir in the chilies (or substitute 1/4 tsp red pepper flakes) and garlic, and cook for 30 seconds longer.
Remove the chicken from marinade with slotted spoon and add it to the hot pan. Cook until almost done, stirring, about 6 minutes. Add the marinade and cook 30 seconds longer. Remove from the heat and stir in 1 cup of the basil. After the basil has wilted, stir in the lite coconut milk.
Serve with the remaining 1/2 cup basil.
* Personal note: I purchase "Thai basil" from an oriental food market -- very tasty in this dish!
