I pulled this recipe off our local news show's web page.
Mediterranean Grilled Chicken Pasta
Makes 2 servings
12.5 points per serving (that's what I calculated)
Ingredients:
1 Tbsp. olive oil
1 tsp. fresh garlic
1 cup tomatoes, diced (fresh is better)
2 Tbsp. black olives, sliced
1 Tbsp. capers
2 tsp. basil, julienned (fresh, if possible)
3 oz. white wine
2 oz. goat cheese (feta)
2 chicken breasts, grilled and sliced
2 cups short pasta, cooked (penne, fusilli, etc.)
1 cup chicken stock (optional)*
Instructions:
In saute' pan, heat olive oil over medium heat. Add garlic; cook until it begins to olor. Add tomatoes, olives, capers and basil; saute' 3 to 5 minutes. Add wine; cook 2 minutes. Add goat cheese and chicken; heat 1 minute. Add cooked pasta, toss and serve.
Note: For a saucier pasta, add chicken stock until desired consistency is attained.
* I did not calculate the chicken stock into the points value for this dish.
