Baked Buffalo Chicken

If you've ever had "Buffalo Chicken Wings", and liked them...you'll definitely like this one!!


Number of servings: 4
Serving size: 1 breast half and 2 tbs. dressing

From: WW Cream of the Crop WW points~~ 5

INGREDIENTS
Cooking spray
4 (4-oz) skinned, boned chicken breast halves
1/4 cup hot sauce
1 tbs. white vinegar
1 tbs. stick margarine, melted
1 tsp. celery seeds
1/8 tsp. pepper
1/2 cup fat-free blue cheese dressing

INSTRUCTIONS
1. Preheat oven to 400.

2. Coat a large nonstick skillet with cooking spray; place over medium-high
heat until hot. Add chicken; cook 4 minutes on each side or until browned.
Place chicken in an 11 x 7” baking dish coated with cooking spray.

3. Combine hot sauce and next 4 ingredients; pour over chicken. Bake,
uncovered, at 400 for 25 minutes. Serve with blue cheese dressing.

This is so delicious - I actually made extra sauce and marinated the chicken in it ahead of time. I broiled the chicken then put it in the oven for 20 minutes in the remaining sauce. Delicious!

I made a chopped salad of diced cucumber, carrot, celery, corn (1 pt worth), scallions, and tomato. Tossed the veggies in 1/2 TBSP of Ranch dressing (1 pt worth - though you could use FF for 0 pts).

I served it as follows: 1/2 head of Romaine lettuce with the chopped salad on top, then the chicken on top of that... Delicioso! My friend loved it too!

My chicken breasts were a little bigger, so I counted this as 6 pts for chicken, 1 pt for dressing, 1 pt for corn.

I just made this on Friday, except I replaced the tbsp of margarine with a tbsp of Parkay FF Spray. It WAS delish! I will be making this again!

I made this for dinner tonight and thought it was great. Along with cut celery sticks it definitely took care of my buffalo wing cravings! I am going to save the leftovers and slice up for a salad. I think this recipe would also be great with chicken tenders. However, I would only slightly brown them before baking so they won't be overdone.

Good recipe!

I made this tonight for dinner. My DB LOVED it!! And he is very hard to please, especially when it comes to buffalo wings. He even asked me if I can make it again next week. I just can't say enough about this recipe. It was better than my favorite buffalo wing place! Thanks for the great recipe.
