Super easy rice 'n' bean 'n' chicken bake
Ingredients:
1 can black beans (3.5 pts)
2 previously-cooked chicken breasts, cubed (6 pts)
1 jar salsa (0 pts)
3 or 4 bell peppers, chopped (0 pts)
1 large onion, chopped (0 pts)
1 bag shredded fat-free cheddar cheese (8 pts)
4 cups of previously-cooked rice (16 pts)
Chili powder, to taste
Salt and pepper, to taste
Cilantro or parsley, to taste
Cooking spray
Cook the rice and chicken breasts (without oil) first, then set aside.
Take a large pan (9 by 12 is good) and spray it with olive-oil cooking spray. Then spread the chopped onion and peppers evenly on the bottom of the pan. Spread the black beans to form a second layer. Then spread the rice as a third layer, followed by the diced chicken breasts, then the seasonings. Top it all off with the salsa, making sure it covers everything, then the shredded cheese.
Bake in a 350 degree oven for 40 minutes.
Serve with a little FF sour cream. MMM ... easy and yummy, high in protein and fiber. Makes six good-sized servings of about 5.5 points apiece. But check your particular ingredients to make sure the points are the same as mine were.
